The ladies. Their names are Jeanne and Germaine, the great-grandmother and cousin of Laurent Cassignol… Because the winery has marked the youth and sometimes the entire lives of so many of them: Claude, Marie-Pierre, Cécile, Anne, Marion, Florence, Louise… The symbol of this cuvée, the dragonfly, honours transformation, adaptation and lightness! Demoiselles is a tribute to the women who have made up the history of the winery and, more generally, to women! Demoiselles is a simple, easy, discreet wine, just like them!

Cépages : carignan, grenache noir and syrah
Average age of vines : 50 years
Harvest : by hand
Yield : 30hl /Ha
Vinification : Destemmed grapes, thermoregulation for the Grenache Noir and Syrah. Carbonic maceration for the Carignan.
Ageing : 24 months in cement vats
Tasting
Nose : fresh nose dominated by red fruit and hints of garrigue
Palate : red fruits, garrigue, supple tannins, spicy finish
Serving temperature : 16°C
Food and wine pairing : roast pigeon or pheasant with mashed celery or sweet potato, duck breast.

Demoiselles
AOC Fitou rouge
Red blended wine. Grenache noir, syrah, and carignan. Aged for 12 months in cement tanks. Notes of red fruits and garrigue. Soft tannins.
Louise
AOC Fitou rouge
Red blended wine. Grenache noir, syrah, and carignan. Aged for 12 months in cement tanks, followed by 4 months in barrels. Notes of red fruits, garrigue. Spicy finish.
Relique
IGP Vallée-du-Paradis
Red blended wine. Cinsault, syrah, grenache noir, gris, and blanc. Aged for 6 months in stainless steel tanks. Notes of small red fruits (currant, cherry), floral jasmine hint. Fresh attack and peppery finish.
Flo
IGP Vallée-du-Paradis
White blended wine. Grenache blanc, grenache gris, and macabeu. Aged in amphora. Balanced mouthfeel. Floral and mineral notes.
