Experience. This is no longer a challenge! Whether it’s a fad or a genuine philosophy of life, natural wines are winning the hearts of wine lovers. As a winemaker committed to reconciling pleasure, wine quality and the preservation of our environment, excellent oenological analyses led me to dare to try the experiment! A (very fine) experiment. A 100% natural wine, unsulphured, unfined and unfiltered. This wine is made from the same juice as Relique, but with a very different finish. The black and white label is a reminder that there’s nothing more inside… Nature!
Growing & winemaking
Terroir : schist slopes
Cépages : cinsault, syrah, grenache noir, gris et blanc
Average age of vines : 70 years
Harvest : by hand
Yield : 25hl /Ha
Vinification : De-stemmed grapes; thermoregulation for Cinsault, Syrah, Grenache black, grey and white. Native yeasts.
Ageing : 6 months in stainless steel vats, unsulphured, unfined and unfiltered.
Tasting
Nose : notes of fresh bread, granny apple and rhubarb
Palate : tangy palate with a nice grain of tannin, red fruit finish
Serving temperature : 14°C
Food and wine pairing : tartare de saumon à l’avocat et aux agrumes. Les agrumes accentuent l’acidité du vin, tandis que la texture crémeuse de l’avocat trouve un équilibre avec la légèreté du vin, sa fraîcheur acidulée et ses notes de fruits rouges.
